Female owned and operated, this lovely estate painstakingly hand harvests the grapes and riddles every bottle, using only native yeast during fermentation. The 'Aurèlia' cuvée is aged on its fine lees for 30 months before disgorgement, creating a wonderful rich texture filled with croissants, honey, yellow apples, and focused bright acidity to keep you salivating.
