Jean Foillard is a disciple of Jules Chavet and one of the 'Gang Of Four' winemakers in Beaujolais who helped to launch a renaissance of old natural processes of vilification and viticulture. He works exclusively with old vines, ferments with native yeast, and bottles unfiltered with minimal or no sulfur additions. This village level wine is sourced from multiple parcels around Beaujolais, whole cluster fermented in concrete tanks for 15 days, and rested for 7 months before bottling. Serious yet fresh, showing boysenberries, red currants, pomegranate acidity, and slightly wild edge with an earthy creek-bed underbelly. An excellent entry into the wonderful world of Foillard and the natural wine movement in the region.
