Karim Vionnet was a baker before he decided to follow his passion and become a winemaker. He worked under Guy Breton (famous “gang of four” member with Lapierre, Folliard and Thevenet) for 5 years before establishing his own domain in 2006. This new white cuvée is the little brother to the famed single vineyard red Gamay bottling of “Du Beur Dans Les Pinards” which loosely translates into “Arab in your wine” (reflecting Karim's Algerian heritage). Derived from the expression “du beurre dans les épinards“ - a French colloquialism that you say when you have extra money that will allow you to “add a bit of butter in your spinach.”  This 'White Butter' cuvée is manually harvested and dry-farmed old-vine Chardonnay (accounting for less than 1% of all grape production in Beaujolais), fermented with native yeast and aged in neutral French oak.  Showing candied grapefruit in the nose, fleshy yellow apples, lemon curd, green pear skin tannins, medium acidity, and a long dry finish with focused minerality and mild honey notes around the edges.
