The Mignon family have been making wine since 1882, choosing to work solely with the red grape Pinot Munier. They are one of few estates in Champagne that fully embrace biodynamic practices, making soil preparations and tinctures in house to use in the vineyards, harvesting on moon cycles, and fermenting only with native yeasts. This cuvée is equal parts 2017 and 2018 vintages, fermented in steel with no malolactic fermentation occurring, aged on its fine lees for 30 months, and bottled with no added sugar in the dosage. Bright yellow apples, citrusy acidity, red apple skin grip, savory ancient grains, and a strong mineral backbone. A superb and unique example of the Munier grape from a house that has perfected its pure expressiveness.
